Type these in at the map screen before you begin your hunt:

dhbambi - shows location of deer in map view
dhdoeinheat - attracts all bucks to your location
dhstealth - deer won't hear or smell you

Note: in the trophy room any bucks you kill using a cheat code will be marked.
